I am actually planning to make Thai Chili hot sauce for small scale commercial.
midwestsupplies: The red sauce you're referring to is actually V8. You can use standard tomato juice/sauce or home grown tomatos too. One thing to note: using V8 can impart flavors to your hot sauce that some people dislike. Also, when adding tomato juice/sauce to your hot sauce, you'll will need to keep your hot sauce refrigerated.

midwestsupplies: Homemade hot sauce, when done correctly, can last for months without spoiling. You can store your hot sauce at room temperature if your ph level is between 3-4. The vinegar will prevent it from spoiling. Since you may not know exact ph level and the condition of your ingredients, I would recommend storing your hot sauce in the fridge for up six months.
